This comprehensive book provides a complete background for anyone who requires a reference for cooking techniques and all the information needed to run a successful kitchen in the New Zealand home. It was intended as a working text book for cookery students, but it goes much further than that with classic recipes and a huge amount of information about everything from kitchen utensils to vegetables and all meat, fish and poultry cuts.

Nutrition, pastry, baking and much more are covered with many useful charts and illustrations.

Curiously the food photography is not captioned although most photos fall next to or near the given recipe.

It would be terrifically useful for a beginner cook and provides a good reference for more accomplished chefs too.

I have the first edition of this book and it is a superb recipe and reference book. I gave copies to both of our twenty-something sons for Christmas and they love it. Great range covering basics such as sauces right through to complex dishes. I recommend that it is worth having on any cook's shelf. :)
